Oh, how I wish I had some stats for you! Unfortunately I don't, but I'm copying the whole list on case someone else does. Have you read Graham Meltzers book about cohousing and sustainability? He did a series of case studies, more qualitative work, but might contain something about water conserving cohousing practices that you could use to help build your case. This is exactly the kind of research we are trying to get funding for!

Hello, I am involved with a proposed co-housing development in Madera
County, California. Because water usage is always a constraint in the
approval process we are building a case that could present a lower usage than
the typical use per person in a single family residence. Are you aware of any
co-housing projects that meter their water consumption? Any statistics would
be most valuable.
